Method

 

1.      Soak the tamarind in water and keep it aside.After some time make it into a thick paste and strain it.Add 1 ½ cup of water to dilute it.

 

2.      Boil the eggs in a sauce pan for 10-15 minutes.Make sure they are not hard boiled.

 

3.      Allow cold water to run over the eggs and after 5 minutes remove the shell from the eggs.Slit on top of the egg for an inch to make a plus sign and keep them aside.

 

4.      Cut onion and tomato into small pieces.Cut the garlic into two halves.

 

5.      Put ½ teaspoon of fennel seeds and coconut in a blender and grind it into a fine paste and keep it aside.

 

6.      Heat the oil in a sauce pan and put fennel seeds,fenugreek and curry leaves in that order.

 

7.      When it splatters add the garlic,onion,tomato and sauté well.

 

8.      Pour the tamarind juice and add salt.

 

9.      Add the turmeric powder,chilly powder,dhania powder and stir well.

 

10.  Allow the mixture to boil for 10 minutes in medium flame.

 

11.  When it gets to a thick consistency add the grinded coconut paste and allow to boil for a few more minutes.

 

12.  Now add the eggs and stir well and after 2 minutes off the stove.

 

13.  Transfer to a serving dish.

 

 

Tips

 

·          Make sure the eggs are not boiled for too long otherwise the egg yolk gets too hard.

·          Running cold water over the eggs makes it easier for the shell to be removed from the eggs.

·          For vegetarians the eggs can be substituted with drumsticks(murungakkai).The drumsticks should be sautéed with onion and tomatoes.

·          By adding ½ cup of water the drumsticks get boiled well.

·          The drumsticks give a very good flavor too.

·          The same dish can be prepared with a lot of ripe tomatoes instead of eggs.

·          Coconut can be avoided if needed.
