Method

1.
Wash and soak the toor dhal and split
chick peas in water for 3 hours. 2.
Now grind fennel seeds(1 teaspoon) and
dried chillies(10) in the blender first. 3.
Strain all the water from the dhal and
grind it coarsely in the blender. 4.
Don’t add too much water for grinding. 5.
Shred the cabbage as fine as possible. 6.
Finely cut the onions. 7.
Pour 10 teaspoons of oil in a big
tawa(wok) or casserole. 8.
When the oil is heated put ¼ teaspoon
of fennel seeds and curry leaves. 9.
When they splutter add the onions and
sauté them well. 10. Now add the shredded cabbage and sauté it well. 11. Add turmeric powder,chilly powder and salt(1/2 teaspoon) and
sauté them well along with the cabbage. 12. Now add the grinded dhal mixture and keep on sautéing well. 13. Add the remaining salt(1/2 teaspoon) and reduce the fire. 14. Once in 5 minutes keep on turning over the mixture with a
spatula so that everything gets fried evenly. 15. After 30 minutes the pasty nature of the dhal will slowly fade
away and it will would look like bread crumbs. 16. Keep on frying well until it
changes to a reddish brown color. |
Tips

The
more toor dhal you add the dish is going to take time to get done.That’s why
I have given an equal ratio.You can even lessen the quantity of toor dhal a
little bit if needed. ·
Food
Processor would be the best to shred the cabbage.Since it is going to take
time to finely cut cabbage. ·
You
can grind the dhal in the food processor without adding any water.That’s the
advantage of a food processor. ·
Beans,Plantain
Flower(vazhai-pu),Snake Gourd(podalangai) can be used instead of cabbage for
the same recipe. ·
Using
a non-stick casserole or tawa would give best results. ·
The
amount of chilly powder can be reduced according to individuals taste. ·
The
more oil you add the faster the dish gets done. ·
Although
the preparation time would be around 45 minutes this is a very tasty dish. ·
Goes
along very well with sambhar rice and curd rice. |
