Method

1.
Soak the tamarind in water and keep it
aside.After some time make it into a thick paste and strain it.About 1/3 a
cup would be enough. 2.
Pour less water onto the raw rice and
wash it so that the strained water is quiet thick. If u are planning to do
this item start doing this process 3 or 4 days before and each time u wash
the rice keep on collecting the water and save it in the fridge. U will get a
thick white water(usually called arisi mandi). 3.
Wash the oakras, cut both the ends and
wipe it properly. Cut the oakra 3/4th of an inch. The smaller U cut it gets
mushy soon. 4.
Cut the garlic and onion into small
pieces.Each garlic flake can be cut into two. 5.
Slit the chillies. 6.
Keep the tawa on the stove top and
pour two spoons of oil. When it gets heated up put the cut oakra pieces in it
and sauté them in low heat. It will take about 10 - 15 minutes for the oakra
to get fried. Make sure it doesn't get too mushy. 7.
Keep the tawa and pour 4 teaspoons of
oil.After it gets heated up put the mustard seed and curry leaves. 8.
After they splutter add the
chillies,garlic and onion one by one in the same order and fry them up well. 9.
Now add the fried up oakra pieces and
pour the tamarind paste. 10. Mix everything well and add the strained water (arisi mandi). 11. Add salt and allow it to boil until it gets thick. 12. Transfer to a serving dish. |
Tips

·
Arisi
mandi can be substituted by mixing 3 teaspoons of rice flour in 1/3 cup of
water. ·
If
the oakras are small they really taste good. ·
Make
sure the sticky nature of oakra is gone while frying in the tawa. ·
The
same recipe can be done without using oakras and adding a lot of chillies. ·
All
type of vegetables can be used for this dish. ·
Goes
along very well with curd rice. ·
Stays
good for a long time in the fridge. |
